The most perfect gluten free shortcrust pastry absolutely chuffed with how this turned out! Only four ingredients & super easy to make. If you’re using this for a savoury recipe, add a tsp salt, if for something sweet, add 2 tsp sugar

ingredients:
- 1.5 cups GF flour (use flour containing xantham gum, I use Woolworths own brand flour)
- 1/2 cup butter (I used a dairy free olive spread)
- 1 egg
- 1 tsp cold water
Method:
- Preheat oven to 180c fan
- Mix the flour and butter together. Your butter must be chilled and cold before using otherwise the dough won’t hold
- Mix in the egg
- Add the water. If the dough is too dry add another tsp, if the dough is already fairly moist you can leave out the water
- leave the dough to chill for at least 30 minutes before using
- You will need to work the dough for a few minutes before rolling it out
- The pastry takes about 25 minutes to bake depending on the recipe, thickness and filling may differ your cooking time. Remember to fork the bottom before cooking!
