Quite possibly my favourite recipe of all time. Definitely the one I make the most. Whilst most cheesecake will have cream cheese in it, I use white chocolate to set the cheesecake. You can interchange the type of yoghurt you want to use & go for a different fruit if you’d prefer!





There’s no baking involved in this recipe, just a simple leave to set! This recipe works equally well if you freeze it to make frozen cheesecake bars- they taste like ice cream!


Ingredients:
- 240g GF biscuits
- 1/2 cup butter
- 750g mango yoghurt
- 300g white chocolate
- Punnet of strawberries
Method:
- Crush up the biscuits
- Melt the butter and mix in to the biscuits
- Add the mix to a tin- I used a 22cm wide tin
- Chop up your strawberries. I sliced some for the top and cut the rest in to chunks to mix in
- Melt the white chocolate & then slowly add in the yoghurt
- Stir in the chunks of strawberry and add the mix on top of the biscuit base
- Add some strawberries for decoration
- Best left in the fridge overnight to set
