Strawberry Mango Cheesecake

Quite possibly my favourite recipe of all time. Definitely the one I make the most. Whilst most cheesecake will have cream cheese in it, I use white chocolate to set the cheesecake. You can interchange the type of yoghurt you want to use & go for a different fruit if you’d prefer!

There’s no baking involved in this recipe, just a simple leave to set! This recipe works equally well if you freeze it to make frozen cheesecake bars- they taste like ice cream!

Ingredients:

  1. 240g GF biscuits
  2. 1/2 cup butter
  3. 750g mango yoghurt
  4. 300g white chocolate
  5. Punnet of strawberries

Method:

  1. Crush up the biscuits
  2. Melt the butter and mix in to the biscuits
  3. Add the mix to a tin- I used a 22cm wide tin
  4. Chop up your strawberries. I sliced some for the top and cut the rest in to chunks to mix in
  5. Melt the white chocolate & then slowly add in the yoghurt
  6. Stir in the chunks of strawberry and add the mix on top of the biscuit base
  7. Add some strawberries for decoration
  8. Best left in the fridge overnight to set
