Have a busy week ahead of you? This curry is perfect for saving time later in the week. If you’re not a fan of tofu just add some more veggies!








Ingredients:
- 4 garlic cloves
- 1/2 red onion
- 1 can diced tomatoes
- 1 can coconut cream
- 2 veg stock cubes in 3 cups water
- 1 carrot
- 2 sweet potato:
- 2 zucchini
- 1 cup green beans
- 2 cups tofu
- 1 tbsp ginger
- 2 tbsp curry powder
- 1 tbsp chilli powder
- 1 tsp turmeric
Method:
- Cut up all your veg& tofu in to bite size pieces
- cook the garlic and onion in the diced tomatoes for a few minutes until soft
- Add in the coconut cream and veg stock
- Add in all the veg and spices etc and cook for 10 minutes
- Add in the tofu
- Cook for another 20 minutes or until all the veg is soft
Best served with rice and peanuts for garnish!
