Sweet Potato & Zucchini Curry

Have a busy week ahead of you? This curry is perfect for saving time later in the week. If you’re not a fan of tofu just add some more veggies!


Ingredients:

  1. 4 garlic cloves
  2. 1/2 red onion
  3. 1 can diced tomatoes
  4. 1 can coconut cream
  5. 2 veg stock cubes in 3 cups water
  6. 1 carrot
  7. 2 sweet potato:
  8. 2 zucchini
  9. 1 cup green beans
  10. 2 cups tofu
  11. 1 tbsp ginger
  12. 2 tbsp curry powder
  13. 1 tbsp chilli powder
  14. 1 tsp turmeric

Method:

  1. Cut up all your veg& tofu in to bite size pieces
  2. cook the garlic and onion in the diced tomatoes for a few minutes until soft
  3. Add in the coconut cream and veg stock
  4. Add in all the veg and spices etc and cook for 10 minutes
  5. Add in the tofu
  6. Cook for another 20 minutes or until all the veg is soft

Best served with rice and peanuts for garnish!
