Wonderfully soft cookies packed with goodness, perfect for breakfast! Leave in the oven a little longer if you want them to be a little more crispy. These are great for mornings if you’re on the go but also perfect as a snack whilst hiking and throughout the day.








This recipe makes about 12 cookies and the prep time is around 10 minutes
Ingredients:
- 2 medium bananas
- 1 cup peanut butter
- 1/2 cup honey
- 4 cups oats
- 1 tsp cinnamon
- 1/4 cup pumpkin seeds
- 1/2 cup chopped almonds
- 1 cup dried fruit
- 60g chopped dark chocolate or chips
Method:
- Preheat oven to 180c fan
- Mash the bananas
- Add peanut butter and honey and mix
- Stir in the cinnamon and oats
- Mix in all the other ingredients
- Shape in to cookies and add to a baking tray
- Bake for 13-15 mins
