Granola Cookies

Wonderfully soft cookies packed with goodness, perfect for breakfast! Leave in the oven a little longer if you want them to be a little more crispy. These are great for mornings if you’re on the go but also perfect as a snack whilst hiking and throughout the day.

This recipe makes about 12 cookies and the prep time is around 10 minutes

Ingredients:

  1. 2 medium bananas
  2. 1 cup peanut butter
  3. 1/2 cup honey
  4. 4 cups oats
  5. 1 tsp cinnamon
  6. 1/4 cup pumpkin seeds
  7. 1/2 cup chopped almonds
  8. 1 cup dried fruit
  9. 60g chopped dark chocolate or chips

Method:

  1. Preheat oven to 180c fan
  2. Mash the bananas
  3. Add peanut butter and honey and mix
  4. Stir in the cinnamon and oats
  5. Mix in all the other ingredients
  6. Shape in to cookies and add to a baking tray
  7. Bake for 13-15 mins
