If you’re looking for an easy meal to prepare for the week this is perfect! Substitute the turkey mince for beef or chicken if you’d prefer. I’ve paired mine with my egg fried rice recipe but it goes perfectly with lentils, quinoa, plain or flavoured rice & potato.


The prep for this only takes 5 minutes so it’s perfect for something quick.


Ingredients:
- 500g turkey mince
- 2 medium zucchinis chopped
- 1 garlic clove finely chopped
- 3 tbsp chopped tomatoes
- 2 spring onions
- 1 tbsp honey
- 1 tsp sesame oil
- 2 tbsp soy sauce
- 1 tsp parsley
- 1 tsp oregano
Method:
- Cook the mince on a medium heat
- when cooked, add in the zucchini and spring onions along with the chopped tomatoes and garlic
- Add in the honey, herbs, soy sauce and sesame oil and cook until the zucchini is soft
I paired mine with egg fried rice!
