Egg Fried Rice

For some reason I always thought egg fried rice would be hard to make but after giving it a go I now realise how silly that assumption was. Always face your fears I guess??

If you wanted a very very basic rice I would take out the spring onions and garlic but they really enhance the flavour so I would keep them in if you can. Easy alternative can be made with this; add in some prawns, carrots, mince etc.

Ingredients:

  1. 400g day old rice
  2. 1 large garlic clove
  3. 3 eggs whisked beforehand
  4. 1 large spring onion finely chopped
  5. 1/4 cup soy sauce (I used light, low sodium)
  6. 3 tsp sesame oil

Method:

  1. In a large pan over medium heat, add a little oil and chuck in your rice. Cook for a few minutes and add the garlic. Cook for a few more minutes and then push to one side of the pan
  2. Add your eggs to the empty side and cook until almost done and then mix in with the rice and garlic
  3. Add in the spring onions, soy and sesame. Cook until the spring onions are a little soft and then take off the heat.

This is a great quick alternative to jazzing up a meal instead of having plain rice. I paired my rice with some honey zucchini turkey as meal prep for the week!
